Cooking class with Jean Soulard and the Chateau Frontenac's best-kept secrets

Tuesday, September 18, 2007 - 10:00 a.m. to 12:30 p.m.

This program will allow participants to uncover some of the Château Frontenac's best-kept secrets: those of its famous visitors as well as those in the kitchen! First, the internationally renowned chef of the Château Frontenac, Jean Soulard, will reveal some of his secrets and specialties during an exclusive cooking lesson. His main goal is to help guests discover the incredible local products that are available at the market and to demonstrate how cooking can be simple, yet sophisticated and remarkable.

Following the presentation, participants will tour the historic hotel, accompanied by official guides in period costumes. They will be taken to exclusive areas of the building while guides reveal stories and anecdotes about famous visitors and events that were held there in the past century.

Golf Outing at the Royal Quebec Golf Club

Tuesday afternoon

Founded in 1874, The Royal Quebec Golf Club is the second oldest golf club in North America. Located only 20-25 minutes from Quebec City Centre, and a stones throw from the Montmorency Falls, the 36 hole Royal Quebec is the most prestigious club in the Capital City region. The original "Royal" course, a 6600 yard Willie Park Jr. design, ideally compliments the newer 6450 yard "Quebec" course, which is shorter but tighter.

The club is located on a 186 hectares piece of land with majestic pine trees growing since the beginning of the century. The club house, overlooking the 18th green of the Quebec course, is a true architectural jewel. Its panoramic windows offer a spectacular view of Î'le d'Orléans and Quebec City. Greeted and served by a discreet and friendly staff, the guests can enjoy a delectable and refined cuisine in the perfect atmosphere for get-togethers with friends or business meetings.

We have obtained confirmed that we have starting times for 24 golfers with the first tee time being 1:30 PM. Carts will be provided. With sufficient notice, that number might be expanded. Prizes will be rewarded!

For the true golf enthusiast, The Royal Quebec Golf Club has published an history of their course and its construction. This and many souvenirs will be available for sale. The club manager has indicated that we might be able to add a few players, but please register as early as you can.

For those who less interested in shopping or exploring on your own, bus tours can be arranged so that you can experience the European charm of the first French settlement in North America. This is your chance to visit history first hand. The Latin Quarter, Plains of Abraham, Ramparts, world famous Château Frontenac, National Assembly, Basilica, City Hall, Place-Royale, Citadelle and a glimpse of modern Québec City are the perfect introduction to the city.

A Day in Baie Saint-Paul and St-Joseph de la Rive (Charlevoix region)

Wednesday, September 19, 2007 - 8:30 a.m. to 4:30 p.m.

First stop will be at the Parc de la Chute Montmorency for you to admire this natural water fall 1.5 times higher than Niagara Falls. As you travel towards the Charlevoix region, you will discover the small historical villages overlooking the St. Lawrence River. You will be accompanied by a professional guide informing you on Quebec and Charlevoix regions.

Baie St-Paul is a little town nestled in a valley with many two-hundred-year-old houses which bear witness that this it is one of the oldest towns in Quebec. You will enjoy its narrow streets interspersed with quaint boutiques, art galleries and sidewalk cafes. Baie St-Paul has been justly nicknamed the "Artists' Paradise". Clarence Gagnon, Marc-Aurèle Fortin, René Richard, Jean-Paul Lemieux and many others have immortalized this magnificent region. Artists and craftspeople draw steady inspiration from the natural beauty they see all around them. Upon arrival, you will visit the Centre d'Art, which presents painting that influenced the greatest Canadian artists since the start of this century, paying tribute to nature, its quiet strength and everlasting beauty.

Further on the way, you will visit St-Joseph de la Rive, a little town nestled between the mountains and the river and that has successfully preserved its heritage. On the shore, some schooners docked at the shipyard for refitting recall the large shipyard that once was this community's lifeblood. A few inns and summer homes continue a long tradition of hospitality.

You will visit the Papeterie Saint-Gilles, an artisan factory manufacturing paper using 17th century techniques. You will see craftspeople manufacture fine cotton paper inlaid with local leaves of flowers. Across the street, the Maritime exhibit, an old shipyard, tells the story of Charlevoix's maritime past. A stop at the Santons de Charlevoix, renowned for their small clay figurines will complete this tour.

Lunch will be served in a quaint restaurant of the region.
